This meal consists of nixtamal tortillas and gallo pinto. The tortillas, made from corn dough mixed with wood ash, are rich in niacin and essential amino acids, enhancing nutrient absorption. Gallo pinto, a combination of beans and rice, provides a complete protein, vital for sustenance. The black beans, packed with anthocyanins and folates, contribute to colon health, blood pressure regulation, and insulin control. 

This breakfast, reflecting a traditional diet, underscores the importance of whole grains, complex carbohydrates, and plant-based proteins in promoting longevity. It’s a testament to how simple, nutrient-rich meals can play a significant role in extending healthy life years.
